A hot little number salad with a big punch! Great source of fiber, potassium, calcium, sulphur and betacarrotene. Something to get your blood going.
• 1 good-sized head of Radicchio
• 12 Radishes
• 2 Red peppers, preferably dark, pointed ones
• 4 small cooked beetroot
• 4 tbsp salad dressing
• 1 bunch Chives, finely chopped
1. Separate the radicchio into its individual leaves
2. Slice the radishes, red peppers. Cut the beetroot into strips
3. Arrange the radicchio leaves in a bowl. Add the red pepper and the radish slices, the beetroot strips.
4. Drizzle with your favorite salad dressing, sprinkle with the chopped chives.
